Step 1:
Melt butter in large cast iron skillet. The cast iron is very important as this will help develop the very dark color roux desired for this dish.

Step 2:
Blend in flour and stir over medium heat, until roux is dark brown. Be patient, this should take at least 20 minutes, and the roux should have a consistency of dark rich peanut butter. This is the key to good etouffee. Do not turn up the heat or rush the process just keep stirring.

Step 3:
Add onion, celery, green peppers, and garlic; cook until tender crisp. Add all spices except parsley and cook for another 5 - 10 minutes,

Step 4:
Str in shrimp, beer, and broth, and allow to simmer for 15 minutes.

Step 5:
Add fresh parsley and simmer 5 more minutes.

Step 6:
Serve etouffee over hot cooked rice.
