Start by slicing the chicken breast into cubes then season with all the spices listed and lime juice. Mix well, if the colour doesn't change it's not well seasoned. Add extra spices if needed.

To make the green sauce, in a blender cup add avocado, yogurt, coriander, garlic powder, salt and pepper. Blend till smooth and creamy. You can store this sauce in a bottle in the fridge.

In a pot, add washed basmati rice with double the amount of water. Add the spices and tomato paste. Mix till combined then bring to a light boil and simmer till fully cooked.

Get a pan on medium heat, add cooking spray or olive oil, cook the chicken for 3 mins each side till golden brown. Set aside the cook sliced onion and bell pepper for 5 mins till soft.

Serve the rice on a plate with chicken, shredded lettuce, onions and peppers, sweet corn, black beans, lime and green sauce. Evenly distribute into 4 equal servings and ENJOY!
