Method
1. Prepare the vegetables
Shred the cabbage, grate/slice the carrots and slice the onion. Chop the garlic.
2. Brown the mince
Heat a large frying pan or wok over medium-high heat. Add the mince and break it up well. Cook until browned and cooked through. If the mince releases a lot of fat, drain some off.
3. Add onion and garlic
Add the onion and garlic and cook for 2–3 minutes until softened.
4. Add curry powder
Stir in 1½–2 tbsp curry powder and cook for about 30 seconds to release the flavour.
5. Add vegetables
Add the cabbage and carrots. Stir-fry everything together for approximately 8–10 minutes, stirring regularly, until the vegetables soften but still have some texture.

6. IMPORTANT — remove Tony’s portion
Before adding the chicken noodle soup mix and Vegetta, remove Tony’s portion from the pan.
7. Finish Tony’s portion
Season your portion with a little extra curry powder and black pepper if desired and add steamed vegetables if desired as well. No added Vegetta, soup mix or extra salt.

8. Finish the family portion
Add the chicken noodle soup packet and 1 tbsp Vegetta to the remaining mixture. Stir thoroughly and cook for another 3–5 minutes, adding a small splash of water if necessary.
9. Serve
Serve the family Chow Mein with their preferred amount of rice.

🥗 Tony’s portion
* Approximately 150 g cooked mince/chow-mein mixture
* Make sure your serving contains a generous amount of the cabbage and carrot.
Rice:
* ⅓ cup cooked brown/red rice

Seasoning:
* No added salt
* No Vegetta
* No chicken noodle soup mix
* Black pepper and a little extra curry powder are fine.

Optional: Add your usual salad or some extra steamed vegetables if you’re still hungry.
