Half the brisket and cover in flour

With half the oil, fry off brisket until brown

Remove brisket and add the rest of the oil and gently fry off Garlic, ginger and lemongrass

Add brisket back to pot, add the remaining ingredients and stir

Pressure cook for 45mins to 1 hour

Serve on top of rice and top with mint, coriander, cucumber and pickled onion
