Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
Press the mixture evenly into the bottom of a greased or parchment-lined 9×9-inch baking dish.
Bake for 8–10 minutes, then set aside to cool.

Make the Cream Layer:
In a large bowl, beat the cream cheese and sugar together until smooth.
Add vanilla extract and eggs, one at a time, mixing until fully incorporated.
Pour the cream mixture over the baked crust and spread evenly.
Bake for 20–25 minutes, or until the center is set. Allow to cool completely.

Prepare the Strawberry Topping:
Dissolve the strawberry gelatin in 1 cup of boiling water, stirring until fully dissolved.
Let the mixture cool slightly, then stir in the chopped strawberries.
Carefully pour the strawberry mixture over the cooled cream layer. Refrigerate until fully set, about 2–3 hours.

Make the Crumble Topping:
In a small bowl, mix graham cracker crumbs, brown sugar, and melted butter until crumbly.
Sprinkle the crumble over the set strawberry topping

Slice and Serve:
Once fully chilled and set, cut into squares and serve.
