Boil potatoes whole (to minimize water getting into the potato) - ~25 minutes. Drain and cool

MAKE DOUGH
- Add flour, corn starch, salt, onion seeds
- add oil
- add water - start out with 300ml then add a tablespoon at a time. mix until until dough feels like play dough

MAKE FILLING
- dice onions (small to medium)
- add 3 TB oil and add onions to pan. Add 1 cup water to allow onions to become soft but not brown. Add more water until onions are soft. Turn off heat.
- dice potatoes into small pieces close to other veggie sizes. This recipe took skins off but leave them on for the first time
- Turn onion pan back on, add cumin seeds & toast until they are fragrant
- Add garam masala and a lot of black pepper with 1 TB oil
- Add frozen veggies
- add 2 tsp salt
- cook until all veggies are warmed
- add potatoes
- add lemon juice
- add more seasonings if needed

SHAPING DOUGH
- Make 50-60g dough balls (use small amt of dough to keep from getting too dry)
- make roundish tortilla shape ~.5 inch thick with all pieces (keep covered)
- cut dough in half. Use cut sides to make ice cream cone shape and press to seal.
- fill but leave room to seal top. Pinch top to seal
