Combine all broth ingredients except the mushrooms in a pressure cooker for 1 hour on high pressure. Strain the broth and refridgerate. It is easier to skim fat once the broth is chilled.

Sous vide chashu and brown in oven at 500 F. Once cooked, refridgerate till it hardens to make slicing easier.

Reheat your broth and add mushrooms. Simmer it down till you are happy with the salt level or add more to taste.
