Into a skillet, add the EVOO, let preheat. Add the grated tomatoes and cook until most of the juices are cooked/evaporated.

Into a bowl, add the eggs and some pepper to taste (avoid salt because you will add feta cheese at the end).

Transfer the eggs into the skillet with the tomato sauce and mix very well to make scrambled eggs. Keep cooking on medium heat until the eggs are fully cooked by stirring occasionally.

Add the feta cheese, mix very well.

Turn the heat off, drizzle some fresh EVOO and Greek oregano and enjoy with grilled bread.
