Steps

Combined all the spices into a bowl, stirring to blend thoroughly.

Coat the bell peppers and onions with half of the spice mix. Toss the spiced veggies into a pan with a small amount of cooking spray and let them sauté for about 8 minutes.

Lightly spray a sheet pan with cooking spray. Toss the other half the spice mix on the chicken (coating both sides of the chicken). Place the chicken on the prepared sheet pan.

Bake the chicken at 375 °F for about 15 minutes or until chicken is no longer pink.

Remove the sheet pan from the oven Top each piece of chicken with the tomatoes & avocados, then top each with a slice of the cheese.

Place the sheet pan back into the oven and broil on high until cheese has melted and crisped a bit in areas.

Serve with the peppers and onions on top of each piece and douse with your favorite salsa and/or light sour cream for added deliciousness!
