Preheat oven to 350°F.

In a shallow roasting pan, add roast. Bake for 50 minutes.

In a small saucepan, combine cornstarch, cinnamon, salt and orange zest. Stir in orange juice and cranberry sauce. Cook over medium heat until thickened.

Place onion around roast and spoon about 1 cup cranberry mixture over roast. Save any leftover cranberry mixture for serving. Continue baking 30-50 minutes, until an internal temperature reaches at least 145°F.

Allow roast to rest about 10 minutes, then cut into slices. Serve with segmented orange and any remaining cranberry mixture.
