Oatmeal Chocolate Chip Cookies With Fresh Milled Flour

If you're using regular flour, I do NOT recommend this recipe. This is intended for fresh milled flour.
I flaked my own oatmeal on this recipe, which was pretty cool. Though if you don't have that, old fashioned oats will work just fine.

You can use soft white wheat or hard wheat or an ancient grain. All will taste good.

Use either room-temp butter or gently melt in pan (which is what I typically do). Low heat until 75% of butter is melted, then you're good to go.

In your mixer bowl, combine butter and sugars and mix until light and fluffy

Add vanilla and eggs and mix until incorporated.

Mill your flour. Roll your oats if you have your own roller (I just got one!)

In separate bowl, combine all dry ingredients.

Slowly mix dry ingredients into the wet ingredients just until the flour is incorporated.

Add any mixins you like (I love dark chocolate chips and walnuts myself) then just barely mix until they're evenly distributed in the batter.

Cool in the refrigerator for 30minutes-2 hours

Preheat oven to 375

Add cookies on baking sheet with parchment paper or silicone mat (which is what I use).

If you want to add some fun, sprinkle Himilayan pink salt or other salt on the top of the cookies. I love the salt taste when biting into a sweet cookie.

KEY NOTE:
I have made these before with organic butter and then the regular butter from Aldi. There's quite a bit of difference in the water (this is the same for Walmart organic vs regular butter). I have increased the flour by 100g to account for regular butter. If you're using organic, you may be able to reduce your flour by 50-100g.

I strongly recommend to bake ONE cookie by itself for the first time to make sure it rises based upon your liking. If it's flat, add another 50g of flour to the recipe and bake another cookie, repeating until you have the awesome cookie you dreamed of!

Bake for approx 10 minutes. On the first ones, watch this since your oven may behave differently than mine.

Gently move onto cooling rack - they are still pretty soft. As they cool, they'll solidify nicely - if you can wait that long!

Notes

Try 1: 200g soft white wheat flour (I used Einkorn) and 2 cups fresh milled oats. Was too flat.
Try 2: 300g Einkorn and 2 cups fresh milled oats. Much better, but may want to up to 350-400g on the next try
