Marinate the chicken: In a bowl, whisk together olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and toss to coat. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Cook the chicken: Grill, pan-fry, or bake the chicken breasts until cooked through and nicely browned. Let rest for 5-10 minutes, then slice.

Prepare the vegetables: If not already cooked, grill or roast the corn and red bell pepper slices until tender and slightly charred.

Prepare the avocado: Mash the avocado with a fork, season with salt and pepper, and a squeeze of lime juice if desired, or simply slice it.

Assemble the bowl: Place cooked rice in the bottom of the bowl. Arrange the sliced chicken, corn, and red bell pepper on top of the rice. Add a dollop of mashed avocado or sliced avocado. Garnish with fresh cilantro and a lime wedge. Add toppings as desired and drizzle with the sauce
