Preheat the oven to 300 degrees Fahrenheit. Line a baking sheet with parchment paper.

In a large mixing bowl combine oats, nuts, and coconut together.

In a separate bowl stir together oil, honey, maple syrup, brown sugar, salt, vanilla extract, cinnamon, and nutmeg (optional). Stir until well combined.

Pour the wet ingredients over the dry ingredients and mix until coated.

Spread onto the prepared baking sheet and bake for 30-35 minutes, stirring carefully half way through.

Let cool completely and break into desired size pieces. Store in an airtight container for up to 6 months.
