Season ribs with rub. Use 1 tbsp of rub per 2 lb of ribs. Use mustard as a binder.

Smoke the ribs for about 3-4 hours spraying with a 50/50 mix of apple juice and apple cider vinegar every hour. Your ribs should reach an internal temp of 140f to 160f.

Take ribs out of the smoker and wrap. Place 2 tbsp of brown sugar, a tbsp of apple juice/apple cider vinegar and a splash of water. Cook in oven at 275f until the ribs reach an internal temp os 210f. I like to go an extra 5-10 minutes after that point to make them a little more tender.

Glaze the ribs with whatever sauce you want and put them in the oven to get tacky. Slice them up and they are ready to serve.
