Preheat oven to 425 degrees. Wash all of your vegetables thoroughly. Start cutting vegetables, beginning with the root vegetables - potatoes, sweet potatoes, and carrots.

Mix the olive oil, dijon mustard, and seasonings. Toss the root vegetables with approximately 1/3 of the mixture and spread among two sheet pans. Place in the preheated oven for 20 minutes. While those roast, continue cutting remaining vegetables and meat.

Toss remaining vegetables, chicken, and smoked sausage in remaining seasoning mixture. When the root vegetables have roasted for 20 minutes, remove them from the oven, but keep the oven on. Spread the remaining vegetables evenly among the root vegetables on the sheet pans and toss with tongs. Place the sheet pans back in the oven for another 20 minutes.
