Prepare the Rub: In a small bowl, combine the cumin, garlic powder, oregano, and kosher salt.
Season Pork: Pat the pork roast dry. Rub the spice mixture generously all over the meat.

Layer Slow Cooker: Place the chopped onions and carrots on the bottom of a 6-quart (or larger) slow cooker.

Add Pork & Liquid: Place the seasoned pork on top of the vegetables. Pour in 1 ½ cups of beef broth and the 4 Tablespoons of vinegar.

Cook: HIGH: 4 hours

Add Rice & Beans: Stir in the 1 cup of rinsed brown rice and can of black beans

Continue Cooking: LOW: 2–3 hours (Total cooking time on LOW will be 8–9 hours)

Shred & Combine: Remove the pork and shred it. Fry pork on pan for 5min on high heat. Return the shredded pork to the slow cooker.
