Butterfly cut your chicken breasts, season both sides generously with oregano, garlic powder, paprika, onion powder, chilli flakes, salt, pepper and olive oil.

Get a pan on medium heat, cook the chicken for 3-4 mins each side making sure it's golden brown not burnt. Lower the heat if needed.

Remove the chicken and place on a cutting board. Use 2 forks or knives to shred the chicken into pieces.

In the same pan, add chopped onions and bell peppers with more seasoning and cook for 5 mins before adding canned tomatoes, water and the shredded chicken. Let it simmer for 3-4 mins.

Grab your tacos and dip into the mix then place on a separate pan. Add a generous amount of chicken mix, shredded mozzarella then fold, toast both sides for 1-2 mins. Serve hot and ENJOY!
