Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.

In a medium bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin spice.

In a large bowl, mix carrot purée, sugar, egg whites, and oil until smooth.

Add dry ingredients to wet, stirring until just combined.

Fold in the chopped salted nuts gently.
