Combine first 6 ingredients in a bowl; toss. Cover and chill 20 minutes.

Cook pears in a small amount of water in a saucepan 5 minutes or until tender. Drain and mash; set aside.

Roll half of pastry to ⅛-inch thickness on a lightly floured surface. Place in a 9-inch deep-dish pie plate. Spoon half of apple mixture into pastry shell. Spread half of pears over apple mixture. Repeat procedure with remaining apple mixture and pears. Sprinkle with rum, butter, and black walnuts.

Roll remaining pastry to ⅛-inch thickness; transfer to top of pie. Trim off excess pastry. Fold edges under, and flute. Cut slits in top crust for steam to escape. Bake at 425℉ for 45 minutes. Cover edges of pastry with aluminum foil to prevent excessive browning, if necessary.
