Preheat oven to 350°F. Prepare a 3-quart casserole dish with nonstick cooking spray.

Prepare pasta according to package directions to 2 minutes from al dente. Drain and place in prepared dish.

In a large skillet over medium-high heat, add beef and cook until crumbled. Season with taco seasoning and add water (as according to seasoning packet directions). Simmer until slightly thickened, then pour into dish.

Add tomatoes with juices, beans, mixed vegetables and 1/2 of the cheese to the dish. Toss until combined.

Sprinkle with remaining cheese and bake 20-35 minutes, until hot and cheese is melted.
