Method
1. Make the batter
Whisk the eggs, light milk and vanilla together in a bowl.
2. Add the almond meal, wholemeal flour, cocoa powder and baking powder. Stir until you have a smooth, fairly thick batter.
3. Cook the pancakes
Heat a good non-stick frying pan over medium heat. Lightly brush the pan with some of the olive oil.
4. Spoon the batter into the pan to make 6 small pancakes. Cook for approximately 2–3 minutes, until bubbles appear and the underside is set.
5. Carefully turn and cook the other side for another 1–2 minutes.
6. Repeat with the remaining batter, using only a small amount of the remaining oil if the pan needs it.
7. Serve
Place 2 pancakes on each plate and top with approximately ½ cup fresh berries.

No yoghurt required.
If you want a little extra sweetness, use only a small drizzle of sugar-free maple syrup rather than pouring it over the pancakes.

This is best treated as an occasional breakfast/treat, rather than replacing your normal Weet-Bix breakfast every day.

Fruit note: the berries count as your fruit serving for this meal. No need to add another piece of fruit immediately afterwards.
