Add cooking oil and sesame oil to a large skillet or wok over medium high heat. Once heated, add in shrimp and season with salt, pepper, and ginger. Sauté and cook until shrimp are fully cooked, about 5-7 minutes.

Reduce heat to low, remove shrimp, and set aside. Add carrots and peas to the skillet and let sauté for about 2 minutes.
