Place a large tray with water in the oven and preheat to 350°F.

Heat water in a kettle

In a large bowl, mix flour, sugar, yeast, and nutmeg.

In another bowl, combine hot water, cool water, and vanilla extract (add some milk if you’d like)

Add wet ingredients to dry and stir until just combined.

Cover and place in the warm oven (turned off) for 20 minutes to rise.

Heat oil in a deep pot over medium heat.

Gently deflate the dough and add habanero and onion for spicy and savory twist ;)

Drop 10–20 scoops of batter into the hot oil. Don’t overcrowd the pot.

Fry for about 5 minutes per batch, turning until golden brown.
