Ingredients

(Servings: 15 puff puff)

Steps

Place a large tray with water in the oven and preheat to 200°F (turn off when heated).

Heat water in a kettle

In a large bowl, mix flour, sugar, yeast, and nutmeg.

In another bowl, combine hot water and cool water to make warm water** (add some milk if you’d like)

Add wet ingredients to dry and stir until the consistency is pancake batter like (use more warm water if necessary)

Cover and place in the warm oven (turned off) for 20 minutes to rise.

Heat oil in a deep pot over medium heat.

Gently deflate the dough and add vanilla extract (add habanero and onion for spicy and savory twist ;))

Drop 10–20 scoops of batter into the hot oil. Don’t overcrowd the pot.

Fry for about 5 minutes per batch, turning until golden brown.
