"Kugel is a creamy, sweet noodle pudding that is associated with Eastern European Jewish heritage and modern-day holiday meals, but it is a great go-with for any occasion.
Kugel which means pudding or casserole is a traditional Ashkenazi Jewish dish that was brought to America by Eastern European immigrants. Kugels were made from dumplings as early as the 12th century. Later, noodles were substituted for dough, savory ingredients were replaced by sweet ones, and the dish was called lokshen kugel or noodle pudding, which is what my family called it.
There are tons of variations on the basic recipe which includes noodles, eggs, cheeses and sweeteners. Who wouldn’t love something so delectable? I grew up eating this dish and so did my children. When I became a dairy-free eater, this recipe was off limits. So, I modified the ingredients for dairy- and gluten-free eaters."
