Pour the beans into a large colander, sorting through and discarding any stones or debris. Rinse thoroughly, then transfer to a large bowl.

Cover the beans with water, about 2 to 3 inches above the beans. Remove and discard any floating beans. Allow the beans to soak at room temperature for 8 hours, or leave them overnight. Once soaked, drain and rinse the beans.

Heat a heavy skillet over medium-high heat. Pour in the olive oil and let it heat briefly.

Add the diced onions to the skillet and sauté for 5 to 7 minutes, or until they turn soft.

Add the minced garlic, ground cumin, salt, and optional cayenne pepper to the skillet and sauté for an additional minute.

Pour in 8 cups water and the soaked beans into the skillet, bringing the mixture to a boil.

Reduce the heat to a simmer and cook the beans uncovered until they become tender, which should take approximately 1 hour and 30 minutes. Add more liquid as necessary during the cooking process. The beans will be ready when they start to slightly fall apart.

Serve hot, garnishing with freshly chopped cilantro.
