Method
1. Grate the zucchini and gently squeeze out some of the excess water using clean hands or a clean tea towel. Don’t squeeze it completely dry.
2. Place the chicken mince in a large bowl.
3. Add the zucchini, onion, garlic, parsley, herbs and pepper.
4. Add the egg if needed to help the mixture hold together.
5. Mix gently until combined, without overworking the mince.
6. Shape into patties. You should get approximately 8–10, depending on their size.
