Sear the meat all around until you have browning.

Add the rest of the ingredients to the pressure cooker and cook for 80 minutes on high pressure and 15 minutes resting. Remove the meat and set aside. Strain broth. Chill the broth so that the fat may be skimmed off.

Shred the meat and store in fridge.

When ready to eat reduce the consomé till its salty enough for you.

Crisp the meat in the skimmed fat, add some consume(broth) to season the meat and reduce. Grill some corn tortillias and start assembling, Serve with some consomé to dip or sip.
