This easy cucumber salad is a refreshing and tangy side dish. Thinly sliced English cucumbers and red onions are marinated in a sweet and tangy dressing made with vinegar, water, sugar, and fresh dill. Perfect for picnics or as a quick and healthy snack.

Season cucumber slices with 1 teaspoon salt in a large bowl and let sweat 1 hour.

Drain liquids, without rinsing, and toss cucumbers with onion slices.

In a small saucepan over high heat, combine 1 cup distilled white vinegar and 1/2 cup water and stir in 1/2 cup granulated sugar. Continue stirring just until sugar is fully dissolved and liquid turns clear, 3 to 5 minutes.

Pour over cucumbers and onions. Stir in 2 tablespoons minced fresh dill. Cover with plastic wrap and refrigerate 1 hour. Serve cold or at room temperature.
