Season the chicken breasts with cumin, paprika, salt and pepper; then place them in the crockpot along with the key lime juice, olive oil and minced garlic.

Cover and cook on low heat for 3-4 hours, until the chicken is cooked through and tender enough to shred.

Once the chicken is ready, shred it using two forks, letting it soak up the remaining lime juice in the crockpot for added flavor.

Warm the corn tortillas, then fill them with the shredded chicken. top with sliced avocado, slaw mix and chopped cilantro.

Serve immediately, with lime wedges on the side for an extra burst of citrus flavor.
