Make some crispy tofu - cube tofu, add corn starch and S&P to a bowl, spray with oil and air fry. cube your yam or sweet potato and air fry it with the tofu

grate your beets and carrots
soft boil your egg

whatever other veggies you like
snap peas? you could probably air fry those too with the sweet potato
