In a pot, whisk brown sugar, cornstarch, and salt.

Whisk in whole milk, heavy cream, egg yolks.

Put pot over medium to medium low heat to thicken. Continuously stir with a spatula to prevent eggs from scrambling. When the spatula starts getting solids when scraping the bottom, switch to a whisk.

Once it becomes real thick and satin in texture, pull off heat.

Add butter and vanilla extract.

Pour into pie crust and cover with plastic wrap. Put the plastic wrap against the butterscotch to prevent a skin forming.

Usually needs to sit 4-6 hours in fridge to set. Too with meringue or whipped cream.
