Start by slicing the chicken into cubes, add all the seasonings listed with olive oil and lemon juice. Mix till well combined.

Next in a pot add washed uncooked rice with the spices listed and water. Bring to a light bubble then cover and simmer on low heat till fully cooked.

Meanwhile get a pan on medium high heat and cook the chicken for 3-4 mins each side till golden brown. Make sure the pan is not over crowded with chicken.

Make the sauce with yogurt, light mayo, fresh garlic, chopped coriander, salt, pepper, cumin and lemon juice. Mix till well combined.

Once ready, serve on a plate or distribute into 4 equal portions in meal prep containers and ENJOY!
