In a large pot or Dutch oven, cook the sausage over medium heat until browned. Drain extra grease if needed.

Add onion, carrots, celery, and a drizzle of olive oil if the pot looks dry. Cook 5–6 minutes until softened. Stir in garlic,
oregano, red pepper flakes and rosemary for 1 minute.

Pour in broth and stir in beans. Pour tomatoes in. Bring to a gentle boil, then lower to a simmer for 15 minutes.

Stir in kale and simmer another 5 minutes, until tender.

Reduce heat to low. Stir in the heavy whipping cream. Let it warm through for 1–2 minutes (don’t boil). Taste and season with salt and pepper.

Stir in kale or spinach and cook until wilted, about 2-3 minutes.

Simmer for about 5 - 10 minutes for flavor to become friends.

Ladle into bowls and top with Parmesan if you’d like.
