1. Chipotle powder is dried, smoked jalapeño peppers. Terrific smokey, earthy flavour with a bit of a kick. Not super spicy, but there is a a buzz of warmth. If you're concerned about spiciness, Chili Powder is a terrific alternative. (??Aussies, do not use what we call Chilli Powder because it's pure chilli (spicy!), US Chili Powder is a spice mix)
Chipotle substitute -1/2 tsp smoked paprika + 1/4 tsp cumin or coriander powder + 1/4 tsp cayenne pepper (if you want spice).
