Griddle set with first 3 burners on medium and seasoned with bacon fat

Take 6” flour (or corn) tortillas and smash 1 oz balls on breakfast sausage all the way to the edges

Brown up 15 hashbrowns then push em into the cool zone

Throw down your tacos sausage side down and let them cook for about 10min

Turn heat down to low and flip them over to toast the tortillas

Add hashbrowns to one side and mexi blend cheese

About 3-4 minutes then remove and set aside and start cooking your eggs

Stack eggs on hashbrowns then another sprinkle of cheese and hot sauce of your choice!
