Preheat oven to 350

Peel and rinse potatoes

using a mandolin or if you know how to use a knife - cut potatoes into thin medallions about 1/2 centimeter thick

toss the potatoes into a bowl with olive oil, S&P

grease a glass pie dish with butter until thickly coated

Line pie dish with overlapping pieces of potato to form a "crust"

bake in oven for 20 minutes or until potato pieces are tender to pierced and slightly browned at the tips. Remove from oven and let cool for 10 minutes. Brush with butter. lower oven to 300

Combine eggs, milk, cream and whatever other ingredients you want in it.

fill your potato crust 3/4 full with egg mixture.

Bake at 300 for 20-40 minutes until egg mixture is set and does not "jiggle" when pie dish is moved. Timing will change depending on what you add.
