About This Recipe
"Typically, I make this sandwich in the summertime and when I'm looking for a quick meal that doesn't require cooking on the stove. It's something healthy that you can eat when times are hard and you're low on cash. It only requires a few simple ingredients, and it provides nutrition and nourishment. I've been told it tastes like chicken but to me, this sandwich tastes more like biting into a spicy carrot.
Around 1975 is when I first made this sandwich. I was about 18 years old at the time. My younger siblings were being impatient and not wanting to wait for a fully cooked meal. Growing up in Philly we always loved sandwiches for being a fast and hearty meal. So I quickly improvised and came up with this sandwich based on the ingredients we had at home. In the refrigerator were a bunch of carrots and my mom always kept plenty of spices and fresh bread in the home. I decided to grate the carrots, sprinkle some cayenne pepper on it, toast some rye bread, and add mayonnaise. I served the sandwich to my siblings and they loved it. The sandwich quickly became a staple dish in our household. Today, when I eat it I am reminded of growing up with my siblings during happy times. "
