Remove the seeds from the pepper and dice. Cut the chicken into 1-inch pieces.

Stir together the orange juice, soy sauce, cornstarch, honey and crushed red pepper in a a small bowl until smooth.

Heat 4 tsp. of the sesame oil in a large nonstick skillet or wok over medium-high heat until shimmering. Add the chicken and stir-fry until browned and cooked through, about 4 minutes. Transfer the chicken to a plate. Set aside.

Do not remove the chicken drippings, and heat the remaining 4 tsp. of sesame oil in the same skillet. Add the bell pepper, stir-fry vegetables and ginger; stir fry until crisp and tender, about 1 minute. Return the chicken to the skillet along with the orange juice mixture. Cook, stirring constantly, until the sauce bubbles and thickens, about 1 minute. Transfer to plates and sprinkle with the sesame seeds, if using.
