Cook spaghetti according to package directions in a large pot of salted boiling water until al dente. Reserve about 1/2 cup of pasta water before draining.

While the pasta cooks, heat a large skillet over medium heat. Add the diced bacon or pancetta and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

If there isn't enough fat in the skillet (about 1-2 tablespoons), add olive oil. Add the chopped onion or shallots and cook until softened, about 3-5 minutes.

Add the minced garlic to the skillet and cook for another minute until fragrant, being careful not to burn it.

Add the julienned or sliced zucchini to the skillet. Season with a pinch of salt and pepper. Sauté until tender-crisp, about 5-7 minutes.

Add the halved cherry tomatoes and cook for 2-3 minutes, just until they start to soften and release their juices.

Add the drained spaghetti to the skillet with the vegetables. Toss to combine.

Return the cooked bacon to the skillet. If the pasta seems dry, add a splash or two of the reserved pasta water to create a light sauce.

Taste and adjust seasoning with salt and freshly ground black pepper.

Serve immediately, garnished with fresh parsley or basil and grated Parmesan cheese, if desired.
