Preheat oven to 350°

Rinse rice and let dry. Combine ingredients into blender and blend.

Heat oil in pan. Add rinsed rice and jalapeño. Cook until rice is golden but not burnt. Be careful not to break the rice.

Pour blended mixture into rice and stir. Add cilantro and cover.

Once simmering, move to oven and let cook for 25 mins.

Remove from oven and let sit 5-10 minutes. Fluff with fork to release steam and stop the cooking process.
