In a very large bowl (or in the bowl of a food processor), whisk together the flour and salt. Cut the butter into the flour with a pastry blender, 2 knives, or your fingers. (If you have a food processor, pulse 7 or 8 times until the flour turns mealy and there are no bits of butter unincorporated.)

Combine the water and milk in a saucepan and heat until the temperature reaches 115 to 120 degrees. (The milk will be warm, not hot.) Remove from heat, add yeast and sugar, and stir to dissolve. Add the yeast mixture to the flour and stir to combine with a large rubber spatula or wooden spoon. If dough is too dry, add a bit more water. If too wet, add a bit more flour.

Knead the dough for 10 minutes by hand. (This can also be done in the bowl of a heavy-duty standing mixer equipped with a dough hook.) Do not add much extra flour. The dough should be smooth and elastic when done. Place in a lightly oiled bowl and cover with plastic wrap. Let rise in a warm spot for 40 to 50 minutes or until dough doubles in volume.

Punch down gently, knead for 3 minutes, and shape back into a ball. Let it rise again, covered, for about 20 minutes or until doubled.

Heat oven to 375 degrees. Grease two 9 x 5 x 3-inch pans for a traditional loaf or 6 small foil pans for meeting loaves. gently press the dough into a rectangle, about one inch thick and no wider than the length of the pan. Roll the dough firmly into a cylinder, pressing with your fingers to make sure that the dough sticks to itself. Turn the dough seam side up and pinch it closed. Place the cylinder of dough in the prepared pan. Cover and let rise for 20 minutes or doubled in volume

Bake for 35-40 minutes for 6 small loaves.
40-45 for 2 larger loaves.
