Ingredients: 1 chicken breast, cooked and finely diced; 2 tbsp red pepper, minced; 2 tbsp green onion, minced; 1/3 cup corn; 1/4 cup black beans; 2 tbsp frozen spinach, thawed; 2 tbsp jalapeno, diced; 1/2 tbsp parsley; 1/2 tsp cumin; 1/2 tsp chili powder; 1/4 tsp salt; 3/4 cup shredded cheddar/ jack cheese; dipping sauce:; 1/2 avacado, smashed; 1/4 cup mayo; 1/4 cup sour cream; 1 1/2 tsp white vinegar; 1/8 tsp salt; 1/8 tsp parsley; 1/8 tsp onion powder; dash dill; dash garlic powder; dash pepper; garnish:; 2 tbsp tomato, diced; 1 tbsp onion, diced; Instructions:; cook veggies and chicken in skillet.; add spices. stir well so spinach is well separated. remove from heat, add cheese and mix in.; wrap tortillas in damp paper towels and microwave 1 1/2 min, until hot.

place filling in tortillas, roll up. secure with toothpick if necessary. place on greased cookie sheet and spray with cooking spray.

bake at 400Â° for 12-15 minutes. golden brown and crispy.
