Steps

Thaw the phyllo sheets as per package instructions. Undroll them and cover them with a towel, as they dry quickly. Melt the butter in a small cup or dish.

In a large bowl mix the eggs. Add the yougurt and mix it as well. Crush the feta cheese and add it to the mixture. Mix lightly to prevent the feta settling on the bottom. Brush the inside of your cooking dish with butter.

Take a sheet of phyllo and place it on your work surface (baking sheet is excelent, or newspaper as we did). Brush with butter, place a second sheet on top and brush it with butter as well.

Take a couple of spoons of the egg-yougurt-feta mixture and spread across the inner 2/3 of the sheets. Fold the sheets in half lengthwise and roll up to form a long rope.

Place the rolled sheets into the cooking dish into a spiral shape. Repeat the same last few steps for all sheets. Brush the top of all sheets with butter. And if you have any left over egg-yougurt mixture pour it over and brush it evenly.

Heat oven to 400F. Place on middle rack and bake until golden, golden/brown. Take out and cover with towel to cool. Enjoy as is or with dipping into sugar.
