3 cups flour- 1 each almond, whole wheat, unbleached

1 cup fluffy stevia

3/4 cup or less thm gentle sweet

1 tsp salt

1 tsp baking soda

1/4 baking powder

3 t cinnamon

3 eggs

1 cup oil

3 tsp vanilla

2 cups shredded zucchini

-for gluten free use 1 cup each almond, brown rice, tapioca and 3 tsp xanthan gum

mix, bake at 350°

in 2 loaf pans 1 hour

3 coffee cans 45 mins

or 18 muffins 25 mins
