Slice the chicken breasts into medium sized cubes then add all the spices listed with lemon juice and yogurt. Mix and let it marinate (30 minutes or overnight for best flavour).

Next skewer the chicken pieces with your veggies of choice. I did red onion, red and green bell peppers.

Next make the sauce. In a blender cup add yogurt, mint leaves, garlic cloves, salt, pepper and lemon juice. Blend till completely smooth.

Get a pan on medium high heat, use olive oil then cook the skewers for 5 mins each side till golden brown then set aside.

In the same pan add chopped onion and bell pepper, cook for a minute before adding turmeric, cumin, paprika, salt and uncooked basmati rice. Mix and toast the rice for 2-3 mins.

Add water then bring to a light bubble then cover and simmer for 8 mins till fully cooked. Serve with the skewers and a generous amount of mint sauce and ENJOY!
