In medium-sized skillet coated lightly with cooking spray, brown ground beef until no longer pink. Remove beef and set aside. Rinse and dry skillet.

In same skillet, place one tortilla, cover with beef and sprinkle cheese on top. Add lettuce and tomatoes. Top with remaining tortilla and heat until cheese is almost fully melted.

Flip carefully to brown other side. Cut into equal parts and serve with ketchup, mustard and/or mayonnaise.
