Combine all stew ingredients into one large pot and let simmer for 4 hours.

For best results: Quickly sear beef on all sides before adding to pot.

After 4 hours, remove the meat and let cool for 10-15 minutes while you strain out remaining ingredients from broth.

Shred and remove bones and excess fat from the meat. Then, add it to the broth in a large soup pot or crock pot.

Cook noodles, baby bok choy, and bean sprouts.

Chop the green onion and cilantro for toppings.

Serving: Start with noodles, then soup, then toppings.
