Cut your wings into 2 pieces and remove the wing tip. Add salt and pepper and let it dry brine in the fridge over night.

Combine all ingredients to make your wet batter and dry batter. When making your wet better add the water slowly and stop when you reach a consistency you like. The thicker it is the more flour that will adhere.

Dip your wings in the wet batter, remove them and let excess batter fall off before placing them in the dry flour. I usually do 2 at a time.

Fry the wings in batches for 11 minnutes at 325 F

I make these in batches and freeze. When reheating in the oven i usually do it around 350 F to not burn the exterior. They come out pretty crispy even from the freezer.
