Roasted/popped Wheat Berries

Heat up large dry frying pan until just starting to smoke (so hot). Pour 1/4-1/2 cup of the wheat berries in the pan and cover (no oil is needed). Continue shaking like they were popcorn kernels.

After a few minutes, many of the berries will pop, but not all will. Watch until they get a nice golden color and place them in a bowl. Repeat until all the wheat berries have been cooked.

Add all remaining ingredients to the wheat berries and mix until everything is fully incorporated.

Bake at 325 degrees, stirring every 7 minutes. This usually takes 20-25 minutes. The mixture should noticeably brown but make sure to not burn (it's easy to do). The mixture should be dry but may not turn fully crunchy until cooled down.
