A hot day calls for a refreshing meal. And this cold pasta salad is the perfect cold dish to easily whip up ahead of time and refrigerate until ready to enjoy.

Preheat oven to 400°F. Prepare a rimmed baking sheet with parchment paper. Lay bacon on prepared baking sheet and bake 18-23 minutes, until desired doneness. Cool on a paper towel lined plate. Roughly chop bacon.

Fill a large pot about halfway full of water. Bring to a boil, then add pasta and cook 4 minutes. Drain and rinse with cold water, then place in a large bowl.

Add bacon, tomatoes and lettuce to the bowl of tortellini. Top with dressing and toss until coated.

Serve and refrigerate leftovers.
